Jenny's last show is this Sunday. I wonder who will be stepping into the role of Rizzo. Must not be a "star" or we'd have some sort of announcement by now.

I am sure there is. This is a new musical and the world premiere of it for the American Music Theater. Possibly she is looking at this as an opportunity that might lead to more (perhaps even moving it to Broadway in the near future. Just speculating...) I thought I had heard a few months ago that she is also pursuing a play of her own and she may have decided that one year in "Grease" is enough.
Also, I'd heard she had taken part in a reading of the new musical Ever After as one of the stepsisters. The show is having a pre-Broadway tryout in San Francisco in April. Maybe she will be in the show and she needs to be available to take part in workshops, etc.
There are tons of reasons of why she's leaving. We're just guessing a few.
