Oh good lord, people, it's a thread about food. Take it easy.

If people want to post recipe's why question them about it. It's a RECIPE for crying out loud.

Hey D&B, my cousin takes my nephew (ish) somewhere in Chinatown for Dim Sum every Sunday, but I can't think of the name of it. It's going to drive me nuts now.

Chinese fried rice with chicken, shrimp, Chinese sausage (lap cheong) and salted fish

Ingredients:

4 cups overnight rice
1 tablespoon fish sauce
1/2 tablespoon soy sauce
1/8 tablespoon salt
1/4 tablespoon sweet soy sauce (ABC Kecap Manis)
3 dashes white pepper powder
1 skinless and boneless chicken breast (cut into small cubes)
1 Chinese lap cheong/sausage (diced into small pieces)
1/2 cup baby shrimp
1/2 cup green peas
2 tablespoons cooking oil
2 cloves garlic (finely chopped)
2 eggs (light beaten)
1 small piece of salted fish (diced into small pieces)

Method:

Heat up a wok with two tablespoons of oil. Add salted fish and fry until aromatic, set aside. Using the same oil, saute the garlic until aromatic. Add in chicken, baby shrimp, Chinese sausage and peas and stir fry until they are half cooked. Season with salt and continue to stir-fry until they are 80% cooked. Add in the overnight rice and stir well with the ingredients. Add in soy sauce, fish sauce, sweet soy sauce, white pepper powder and continue to fry the rice for a couple of minutes.

Make a "well" in the middle of the wok and pour the beaten eggs in the middle of the rice. Wait for 30 seconds and then cover the "egg well" with the rice. Leave it for 30 seconds and continue to stir-fry the rice so the eggs form small pieces and mix well with the rice. Add in the fried salted fish and do some quick stirs, dish out and serve hot.

whenever I've made fried rice, you use rice from the day before.

That's correct BBS! If you use fresh rice, the fried rice would be too starchy. Additionally always refrigerate the overnight/previously made rice so bacteria won't grow.

I went through a phase where I made stir fry at least once a week, but I haven't done it in forever. I might have to break out the old wok too with these new recipes! Thanks for posting them!

(BTW, since we are all discussing where our woks are, mine is in the basement storage room....LOL)

I actually have been getting away with using a flat bottom steel pan when I stir-fry because I have no idea where my wok is! Like I tell my family when something is lost, "we'll find it if we ever move!"smile.gif

I moved and the last thing on my mind was my wok. People are here so early and I'm used to sleepin in. I grabbed my new bouzouki this morning which I always thought was buzz-ooki.

I thought I might give ya'll my pecan pie recipe if anybody wants it.

I usually just make up stir fry stuff as I go along, but reading these recipes has given me some ideas of different ingredients to throw in. I don't know why, but I usually make it more in the summer.

Oh yea, I wanted to ask you guys who seem to know about this overnight rice......what do you do with that? Just make up some rice the day before and then put it in tupperware and refrigerate it overnight? What does that do to it that makes it better for fried rice?

When I usually stir fry, I just do the meat and veggies and stuff and then steam some Jasmine rice and put the meat/veggies over the top with some soy sauce and cashews. I've never made fried rice.

BBS, The rice would be too sticky. Refrigerating it reduces the amount of starch in it so it will fry up well!

On my way out. The first thing you have to know about pecan pie is that it's not pee-can, that's what you put undr the bed in case y ou have to go at night. And it's not pe-CAN like rhyming with Tom Mcann. It's peh-CAWN. So here is what you do,

3 eggs
2/3 c sugar
1/3 c butter
1 c dark corn syrup
1 cup pecans
pinch salt
1 ts vanilla

beat eggs w/sugar, melt butter, add all, bake at 325 for an hour. I hope I didn't forget anything, I'd beter make it tomorrow just in case.

Fried rice is really leftovers from the day before. That's why it's cold, because warm rice would absorb the oil and cold does not.

I make great spring rolls. Will post that recipe when I have some energy. They are really easy and YUMMY!

It depends on what part of the country one comes from as to the pronunciation of pecan. New Englanders say pee-can and southerners say it peh-CAWN.

That's not really true because I'm from the south and I say pee-can, and so did my grandmother, who is also from the south.

Curry Pork Ribs
Ingredients:

2 kg spare ribs

6 tbsp curry powder

250ml thick coconut milk

1000ml thin coconut milk

125ml cooking oil

Spices for frying:

2 stalks lemon grass, bruished

2 cardamons

1 piece star anise

1 small piece cinnamon

Ingredients to blend:

35 shallots

5 cloves garlic

5 buah keras

30 dried red chillies, soaked

2.5 cm piece ginger

2.5 cm small piece lengkuas

Seasoning:

3 tsp salt

1/2 tsp vetsin

Method:

1. Blanch spare ribs in boiling water. Wash and drain.

2. Heat oil and fry spices, lemon grass and blended ingredients for 5 minutes.

3. Add spare ribs, stir-fry, adding the thin coconut milk, salt, vetsin and curry powder.

4. Cook till ribs are tender. Lastly add in the thick coconut milk.
